Crumble khoya and knead with maida, baking soda, and cardamom into smooth, crack-free dough.

Make sugar syrup by boiling sugar and water until one-string consistency. Add rose water and cardamom.

Shape dough into small, smooth balls without any cracks. Keep them slightly smaller than desired size.

Fry in ghee on low heat, turning gently until deep golden brown all over. This takes 8-10 minutes.
