Instructions

    Boil 1 liter milk and add lemon juice to curdle. Strain through muslin cloth and wash under cold water.

    Knead the chenna until smooth (about 10 minutes). Shape into small flat discs.

    Boil sugar and water to make syrup. Cook chenna discs in the syrup for 10 minutes. They will puff up.

    Reduce remaining 1 liter milk to half. Add sugar, saffron, and cardamom. Cool the rabri.

    Squeeze syrup from chenna discs and soak in the rabri. Refrigerate for 4 hours. Garnish with pistachios.
