  • Mixed mushrooms300g
  • Vegetable broth4 cups
  • Parmesan cheese1/2 cup
  • Butter2 tbsp
  • Onion (finely diced)1
  • Garlic3 cloves
  • White wine (optional)1/4 cup

Instructions

    Keep vegetable broth warm in a separate pot. Sauté mushrooms in butter until browned. Set aside.

    Sauté onion and garlic in olive oil until translucent. Add arborio rice and toast for 2 minutes.

    Add wine and stir until absorbed. Begin adding warm broth one ladle at a time, stirring constantly.
