  • All-purpose flour (maida)2 cups

  • Tea bags (for color)2
  • Chole masala2 tbsp
  • Oil for fryingas needed

Instructions

    Soak chickpeas overnight. Boil with tea bags until tender, then drain.

    Sauté onions until golden, add tomatoes and cook until soft. Add chole masala and spices.

    Add boiled chickpeas to the masala, add water as needed, and simmer for 20 minutes.

    For bhature: knead maida with yogurt, salt, and warm water into soft dough. Rest for 30 minutes.

    Roll out bhature and deep fry until puffed and golden. Serve hot with chole.
