- Basmati rice3 cups
- Mutton or chicken750g
- Yogurt1 cup
- Fried onions2 cups
- Saffron in warm milk1/4 tsp
- Whole spices (bay leaf, cardamom, cloves)as needed
- Mint leaves1/2 cup
- Ghee4 tbsp

Marinate meat with yogurt, ginger-garlic paste, fried onions, biryani masala, and salt for 2 hours.

Parboil basmati rice with whole spices until 70% cooked. Drain and set aside.

Layer marinated meat at the bottom of a heavy pot. Spread rice evenly on top.

Drizzle saffron milk, ghee, and fried onions on top. Add mint leaves.

Seal the pot with dough or foil and cook on low heat (dum) for 40-45 minutes.

Gently mix layers when serving. Serve with raita and mirchi ka salan.
